Chicken Chilaquiles Verde

Ingredients
  

  • 1 handful Tortilla chips
  • 1/4 cup Salsa verde
  • 3 oz Rotisserie chicken chopped
  • 2 tbsp Olive oil
  • 1-2 Eggs
  • Cheese of choice as much as you want
  • 1 tinnie tiny Red onion sliced
  • 3-4 Tomatoes grape halved
  • 1 Avocado sliced
  • Cilantro garnish
  • to taste Salt and pepper

Equipment

  • Frying Pan
  • Cutting Board
  • Knife

Method
 

  1. Toast tortilla chips in frying pan until slightly golden. Pour salsa and coat all over chips.
  2. Transfer chips on plate. Add olive oil to pan and fry eggs any style of preference. While eggs are cooking, assemble chicken, avocado, tomatoes, onion, and cheese.
  3. When egg is done cooking, add on top with salt and pepper to season. Finish off with a sprinkle of cilantro.
