Chilaquiles Verde
Happy Cinco De Mayo! If you were to ask me what’s my favorite Mexican dish, I would right away say Chilaquiles. I only know this dish, because I live in Los Angeles and I had it for family meal once, and IMMEDIATELY fell in love. I was like, “Who is this? What’s their name? I’d want to get to know them more!” The next thing I knew, I am introducing chilaquiles to my friends and family. It was meant to be!

What Are Chilaquiles?
Chilaquiles is a popular Mexican breakfast dish of corn chips cooked in salsa, loaded with condiments on top, which are typically huevos (eggs), queso (cheese), onions, beans, and/or cilantro. I like to add avocado and chicken to mine!
Pick your Salsa
Chilaquiles can be cooked in either red salsa (Chilaquiles Rojos) or green salsa (Chilaquiles Verde). I’m using green salsa for this recipe. The professional cook in me aches to make the salsa from scratch, but of course just buying it from the store is very time saving and more efficient as long as you get your hands on good quality salsa. To ensure the quality is exquisite, check the ingredients and make sure it’s minimal with no preservatives, and also that the vegetables are “roasted” or “fire roasted” for enhanced flavor. I’m using Frontera Tomatillo Salsa with roasted serrano and cilantro from Whole Foods.


Chicken Chilaquiles Verde
Equipment
- Frying Pan
- Cutting Board
- Knife
Ingredients
- 1 handful Tortilla chips
- 1/4 cup Salsa verde
- 3 oz Rotisserie chicken chopped
- 2 tbsp Olive oil
- 1-2 Eggs
- Cheese of choice as much as you want
- 1 tinnie tiny Red onion sliced
- 3-4 Tomatoes grape halved
- 1 Avocado sliced
- Cilantro garnish
- to taste Salt and pepper
Instructions
- Toast tortilla chips in frying pan until slightly golden. Pour salsa and coat all over chips.
- Transfer chips on plate. Add olive oil to pan and fry eggs any style of preference. While eggs are cooking, assemble chicken, avocado, tomatoes, onion, and cheese.
- When egg is done cooking, add on top with salt and pepper to season. Finish off with a sprinkle of cilantro.
