As strawberry season comes to an end, and blueberries are abundant, local cafes are hopping on the blueberry matcha trend. As a matcha enthusiast and health-focused foodie, I constructed the best dessert breakfast to make this winter. My blueberry matcha chia seed pudding is packed with antioxidants and delicious flavor profiles to get you looking forward to waking up in the morning!

Chia and Flax Seeds
Both chia and flax seeds are rich in fiber, omega-3s, and protein. It is a fact that less than 10% of American adults get enough daily fiber. If you are part of the 90%, chia and flax seeds are perfect to add to your diet. It’s important to get enough fiber, because it supports good bowel movement, gut health, and weight loss. This recipe includes flax seeds, because why not? They are also perfect binders as they absorb liquid like chia seeds, and they help reduce cholesterol and risk of cancer. The omega-3s in both seeds promote cardiovascular health, such as lower blood pressure and regulate blood sugars.

Blueberries
Likewise to chia and flax seeds, blueberries are also an excellent source of fiber along with antioxidants (for eye health), anti-inflammatory (for nerve and brain health), and blood sugar regulation. Additionally, blueberries also aid in post-work out muscle recovery, improves memory, and anthocyanins (for heart health). This recipe turns fresh blueberries into a comforting preserve made with citrus zest and high-quality sugars. It adds a tangy, acidic taste note to the sweet chia seed pudding.
Matcha
Matcha, matcha, matcha, my bestie! As someone who doesn’t react well to coffee, I love a good cup of matcha in the morning. It has so much health benefits that it has a history of being a monk’s delicacy, as they would drink it religiously. The combination of caffeine and L-theanine work together beautifully, as it boosts not just energy, but also relaxation and focus. Matcha contains all the health benefits of blueberries, chia, and flax seeds combined (minus the protein), and also promotes skin health, good sleep, reproduction organs, and boosts overall happiness. No wonder I love matcha so much, it just makes me so happy!
On the other hand, be careful what matcha you buy. It MUST be high-quality ceremonial from Uji, Japan. No exceptions, or else the matcha will be dusty-colored and the experience won’t be as enjoyable nor contain the complete benefits. The brand I use is Naoki superior blend ceremonial grade matcha, but I highly recommend Jade Leaf organic ceremonial grade tea house edition matcha too.
Probiotics
This recipe has matcha, chia and flax seeds, and blueberries, but there are also probiotics. That’s right, it’s from my secret ingredient- yogurt! Yogurt is made with the 6 cultures (S. Thermophilus, L. Bulgaricus, L. Lactis, L. Casei, L. Acidophilus, and Bifidobacterium). They are microorganisms that aides towards good gut health. Any yogurt ever already has these essential cultures, or else it wouldn’t be yogurt, so don’t be fooled by the yogurts that are marketed as “probiotic yogurt”. Any Greek yogurt or even plant-based yogurt will do.

Blueberry Matcha Chia Seed Pudding
Equipment
- Liquid measuring cup
- Small spoon
- Matcha bowl Any bowl would do
- Tiny sifter
- Small pot
- Microplane
- Whisk or masher
- Small rubber spatula
- 8 0z mason jar or small container
Ingredients
Blueberry Jam
- 1 pint Blueberries washed
- 1 tsp Orange zest
- 1 tsp Lemon zest
- 1 tsp Lemon juice
- 2 Tbsp Coconut sugar
- pinch Seasalt
Pudding Base
- 1/2 cup Coconut milk
- 1 tsp Matcha Ceremonial grade
- 1 Tbsp Chia seeds
- 1 tsp Flax seeds
- 1 Tbsp Honey
- 2 Tbsp Greek yogurt
Instructions
- Combine all ingredients for blueberry jam in a small pot. Cook on medium heat until the blueberries soften, then mash to a thick, jam like consistency. Take off heat.
- In a measuring cup, combine all ingredients for pudding base and sift in the Matcha. Give it a good mix.
- When blueberry jam cooled down, scoop in two tbsps into the mason jar and pour in the pudding base. Refrigerate for minimum four hours before consumption.
