Burnt Maple Matcha Brownies (Vegan, Sugar-Free and Gluten-Free)

*FYI- this recipe was inspired by Mishka Dii on youtube. She made a lovely version of these brownies and this is the good humble foodie version. 🐸🫢

Equipment: πŸ₯£

  • large mixing bowl
  • whisk/ electric whisk
  • liquid measuring cup
  • scale
  • measuring spoons
  • sifter
  • small brownie pan (6 by 4 inches)
  • parchment paper
  • microwave/ heating vessel

Ingredients: πŸ₯œ

  • 150 g almond flour
  • 1 tsp baking powder
  • 1 tbsp matcha powder culinary grade
  • pinch of salt
  • 4 oz apple sauce
  • 1 tbsp flaxmeal *see note
  • 2 oz maple syrup
  • 1 tsp vanilla
  • 2 oz coconut oil melted
  • 3-4 oz oat/ almond milk
  • white chocolate *see note

Instructions: πŸ§‘β€πŸ³

  1. Preheat oven to 360 degrees F.
  2. Melt coconut oil in either a small pot or microwave. Set aside to cool.
  3. Combine dry (first 4) ingredients and set aside.
  4. In a large bowl, add apple sauce and flax meal. Allow meal to get absorbed before adding vanilla, maple syrup, and coconut oil.
  5. Sift in dry to wet and gently fold. Pour milk last for adjusting the texture if needed. Fold in white chocolate chips.
  6. Lightly grease brownie pan with coconut oil and line parchment paper. Transfer batter evenly on the pan. Tap down to release air bubbles. Top with extra white chocolate.
  7. Bake 20 minutes and allow to cool completely before snacking.

Notes: πŸ“

  • Flax meal- works as an egg replacer to bind the batter. Apple sauce does the same trick, but flax meal gives it a stronger texture. It can be easily made by processing flax seeds in a spice grinder.
  • White chocolate chips- the kind is up to the baker. Ideally use white chocolate that’s vegan and dairy-free. Unfortunately our supermarket doesn’t carry vegan and dairy-free chips. This recipe uses Enjoy Life dairy-free white chocolate chips (contains cane sugar). For a sugar-free alternative, Lily’s sugar-free white chocolate chips are ideal and 10 calories less per serving but contains dairy.
